As Tony said, you need to set up the tail type in your transmitter to V tail (your Tx does support V tail). On a 3 channel in mode 2 you would usually set it up so that the right stick controlled elevator and rudder.

This does look like a real step forward. I'm tempted to ditch the Dx18 in favour of one of these, it's not like i need 18 channels anyway.

Usually with a 3 blade head you would want to run slightly lower headspeed. If you run the same or higher RPM flight times will take a big hit.

Timing at ESC default and PWM at highest value supported by the ESC works well pretty much every time. The PWM calc you quote is for calculating the minimum frequency, higher is generally better. The only reason to lower PWM is if the ESC was getting too hot.

If you want to reduce chances of the tail blades hitting the ground on landing and take-off get yourself a set of landing gear legs from the Trex 550X or 700X (same parts on both helis) which have a 5 degree nose down tilt so raise the tail up well clear of the ground.

FWIW I dont think you would have had any trouble with the black gears in the tail. For reasons that i dont really fully understand it's almost always the front gears that strip. It's maybe just Murphy's law in action because the front gears are harder to replace.

Also make sure that the gyro is in heading hold mode.
