The colours on the three motor wires have no meaning, nor does the order which they emerge from the motor. Just connect them to the ESC in whatever way is most convenient. If the motor runs backward (it’s a 50:50 chance) then either swap any two wires, or reverse rotation in the ESC software.

You can leave most settings at default value. No mixing is required, it's all done in the Microbeast. Swash type should be set 'Normal' or 'single servo' which I think is default. About all you need to do is set up throttle and pitch curves.

Those IR readings are still very high but probably ok for low power application like goggles.

Tony, very high and uneven IR will for sure play havoc with a charger's ability to balance. @Hungomez says his batteries were new so i discounted high IR.
