Yup, you are exactly right. I usually have mine set to 350C but as you stated, if I'm working on really small delicate parts, I turn it down, fat heat sink parts I crank that sucker to 11 (or about 500C lol). But I have only had to do that a few times, mainly on things like batteries where I need a fast joint to be made to keep heat from soaking into the project.
