What trainer helicopter should I use for a beginner using the Phoenix RC five and the DX6i transmitter?

Why is it I give it a little power to get some lift, but the copter just leans to the left and blades explode on contact with the deck

Sounds like you need to calibrate the tx on the sim. Not to familiar with with the sims but you should be able to go into transmitter setup to calibrate it. 450 size models are a great way to learn, but if you just want to practice orientation etc without crashing try one of the coaxials that should be on there.

Yes you need to calibrate your transmitter sticks in the phoenix but also have your TX setup with your curves you want to use when actually flying.
