At some point, I tried to setup pitch curve / throttle curve using the 7 steps this Tx has.
Now, I want to go back to 5 steps which seems to be the nrom

But, the steps 6-7 are at ZERO, I need to make them back to be ----- instead

Any idea how?

Looks like it hasn't reset itself to the 5 Point View, try re-booting the transmitter.
It should still work OK as only the vertical axis has any effect, have never seen that happen before, you have all the luck don't you.
 
I tried that several times. What is even more intriguing - TU1 and TU2 are perfect diagonal lines, just Normal mode is NOT...

delete all the intermediate points, leaving only the 0% and 100% points. Then add points back in at 25%, 50% and 75%
