When should I use the rudder trim switch and how ?

are you meaning the one below the left stick?.... you should not need to if you have set up your mechanical tail and gyro correctly.

Yup, what Westy said. You should never have to adjust your tail trim. You will use subtrim to 90º your servo to the linkage, then you will adjust your linkage length to center your slider on your tail. Using trim on the tail will throw off the gyro and it will want to start drifting on ya.
